Fall Kale Salad with Spiced Pumpkin Vinaigrette
I know I know, another kale salad..but I love them!!!
This one is wonderful for when the weather starts to turn cold. Fall pears and pomegranate seeds are the perfect compliment to the rubbed kale, creamy goat cheese, toasted pumpkin seeds, and spiced pumpkin vinaigrette. I mean can you get any more fall than that?!
I love the pop of the pomegranate seeds in this salad. You can buy the seeds or “arils” ready to use at the grocery store, or you can buy the whole pomegranate fruit and take them out yourself!

If you have never purchased a pomegranate, they are delicious and a wonderful activity to get the kids involved. They are also a great fall fruit full of vitamin C, fiber, and potassium.
This recipe doesn’t contain a meat protein source but you can add in whatever you’d like! I ended up soft boiling a couple pasture raised eggs to add to the top but grilled chicken, steak, wild caught salmon would all be wonderful.
Rubbing the kale down until the fibers have softened make a huge difference, but you could also saute your kale and add your toppings to it that way as well.
